Our line of WS-MS-GG ovens have a unique zero-recovery cooking environment. The dense, high-temperature ceramic formulation of which the hearth and dome are cast creates a "deep heat sink" within the chamber of the oven ideal for cooking meats, seafood, vegetables, rustic breads, flatbreads and, of course, pizzas.

The single-piece, cast-ceramic floor sits on 4 inches of rigid insulation and is poured to a thickness of 4 inches. The monolithic dome is cast to a thickness of 4 inches wrapped with at least 2 inches of spun ceramic fiber insulation.

The oven is primarily heated by an easily adjustable wall of radiant flame located at the rear of the cooking chamber. For high production assistance, a thermostatically controlled infrared burner is mounted under the floor.

These dual-temperature heat sources, combined with the tremendous thermal mass of our cast ceramic, ensure constant deck temperatures and tremendous responsiveness for the chef.

The GG line comes in four sizes, WS-MS-4-GG, WS-MS-5-GG, WS-MS-6-GG, and WS-MS-7-GG, with cooking surfaces of 9, 15, 22, and 31 square feet, respectively.

All Wood Stone gas ovens can be configured to burn Natural Gas or Liquid Propane. In addition, each can be ordered with the option to burn wood.

Features

  • Fixed operating cost which is generally cheaper than wood-fuel (typically, the ovens will use between 5 and 8 dollars worth of gas per day).
  • Eliminates the challenges of using wood as a fuel source (storage, transport, consistency, mess, training, frequent duct cleaning/creosote buildup, etc.).
  • Exhaust can be combined with that of other (non-solid fuel) kitchen equipment using grease rated ducting.
  • The programmable underfloor burner and the bright, manually adjustable flame burner makes the oven more responsive than the wood-fired or wood/gas models.
  • The bright flame actually results in a brighter (higher visibility) oven interior than a wood-fired oven.
