That's the idea behind Dodge City Steak Company. Finally, a steak company that is committed to producing the finest quality of steaks by investing the extra time and money necessary to dry age choice tenderloins, delivering superb gourmet steaks that are bolder tasting and more tender.

In May 1999, an article in USA Today entitled "The Best Steaks of Your Life" captured the attention of co-founders Pat George and Doug Parker. They were living in the heart of beef country, the Cowboy Capital of the world, Dodge City, Kansas-the logical place to enjoy the best steak of your life- and yet there were no local providers supplying gourmet dry aged steaks to consumers. Thus the idea for Dodge City Steak Company was born.

George and Parker began an investigative process by consulting with beef packers, processing plants, federally inspected meat cutting companies and food distributors. They talked with representatives from the USDA about the regulations and requirements for the grading process of beef. George and Parker then toured dry aging facilities in Denver and Kansas City, and met with master dry agers to discuss the art of dry aging.

As the concept for the new venture grew, the name Dodge City Steak Company was created. The famous historical name Dodge City, recognized both nationally and internationally, immediately evokes the romance of the Old West. Building on the legendary name, marketing research indicated, "we already had a million dollars worth of name recognition".

Over the next six months, Dodge City Steak Company, LLC was formed and the national office secured space on the actual grounds of the famous Boot Hill in Dodge City. The corporate team was hired and began designing specific products such as steak gift boxes, reuseable Styrofoam containers, private labels and brochures. Alliances were formed with master dry agers, meat cutting facilities and delivery services. By November l999, Dodge City Steak Company, LLC was open and ready for business.
