INGREDIENTS and WEIGHTS/MEASURES
California Avocados-6 (3 pounds)
- Lemon juice-1/3 cup
- Finely chopped onion-1/3 cup
- Chopped garlic-2 tablespoons
- Dried thyme-1-1/2 teaspoons
- Salt-1-1/2 teaspoons
- Coarsely ground black pepper-1/2 teaspoon
- White pepper-1/4 teaspoon
- Cayenne pepper-1/4 teaspoon or to taste
METHOD
Roughly mash avocado. (Texture should not be smooth.) Fold remaining ingredients into avocado. Chill 1 hour to marry flavors. Serve with onion flowers, fried vegetables, chicken wings or use as a topping for grilled meat, poultry, fish or egg dishes.
