Sunfish are a farm raised hybrid of two species (Lepomis Macrochirus/Lepomis Auritus). Sunfish, also knows as "Sunnies", are indigenous to the Great Lakes of the upper Midwest. It has also been found in lakes as far south at Florida. Sunfish tend to run small yielding fillets in the .75 to 1.5 oz. range. Its greenish blue skin is attractive to the eye, but cooks up with great texture, especially when pan fried. The fillet has a tender mild taste. Have your customers explore a new opportunity on a great little piece of fish.
